Ingredients
- 1/4 cup shredded sharp Cheddar
- 1/4 cup shredded Gruyere cheese
- 1/4 cup sliced Robiola cheese
- 1 tablespoon prosecco
- 1 teaspoon chopped fresh parsley
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Four 1-inch-thick slices brioche
- 2 tablespoons butter, at room temperature
- Salt and freshly ground black pepper
Instructions
- Preheat a griddle over medium heat.
- Pulse the Cheddar, Gruyere, Robiola, prosecco, parsley, mustard, and garlic in a food processor until the mixture is blended but still slightly chunky and spreadable. Divide the mixture evenly among the bread slices. Place two slices together to form a sandwich, then spread 1/2 tablespoon of the softened butter on the outside of each sandwich. Season with salt and pepper. Repeat with the remaining ingredients.
- Place the sandwiches on the griddle and cook over medium heat until the first side is golden brown. Flip and continue cooking until the cheese is fully melted and the outer layers are crisp, about 5 minutes per side.
