Ingredients
- 2 tablespoons extra-virgin olive oil
- 4 cloves garlic, minced
- Kosher salt and freshly ground black pepper
- One 28-ounce can whole tomatoes with juice, blended until smooth
- 1 1/2 pounds seitan
- 1/2 cup all-purpose flour
- 1/2 cup cola
- 1 cup vegetable oil
- 4 hero rolls, split lengthwise
- 8 ounces shredded mozzarella cheese
- 3/4 cup finely grated Parmesan cheese
- 4 teaspoons freshly chopped oregano

Directions
- Warm the olive oil in a medium, sturdy saucepan over medium heat until hot. Add the garlic along with 1/2 teaspoon each of salt and pepper. Saut until the garlic is golden, about 3 minutes. Add the pureed tomatoes and simmer until the sauce thickens, about 10 minutes.
- Preheat your oven to 350 degrees F.
- Slice the seitan into pieces about 1/2 inch thick. In a bowl, mix the flour, 1 teaspoon salt, 1/2 teaspoon pepper, and cola until smooth.
- Heat the vegetable oil in a large, heavy skillet over medium-high heat until hot. Dip half of the seitan slices into the cola batter, letting excess drip off, and place in the skillet. Cook, turning occasionally, until browned, approximately 5 minutes. Drain the seitan on paper towels and repeat with the remaining slices.
- Place the seitan slices inside the hero rolls and spoon the tomato sauce over them. Add the shredded mozzarella and grated Parmesan cheese evenly across the sandwiches. Arrange the sandwiches on a baking sheet and bake until the cheese melts, about 5 minutes.
- Garnish the heroes with chopped fresh oregano before serving.
