Ingredients
- 1 vanilla bean
- 8 oz dark brown sugar, about 1 cup packed
- 1/2 cup freshly squeezed lime juice
- Small pinch of kosher salt
- 1 whole pineapple
- 8 skewers (12-inch, metal)
Instructions
- Slice open the vanilla bean and scrape out the seeds. Add both seeds and pod to a small saucepan with brown sugar, lime juice, and a pinch of salt. Whisk over medium-high heat until boiling and sugar fully dissolves. Remove from heat, steep for 2 hours, discard pod, then chill syrup in a squeeze bottle until ready.
- Preheat grill to high heat.
- Peel pineapple, remove core, slice lengthwise into eight wedges, and trim any brown "eyes."
- Thread wedges lengthwise onto skewers. Brush generously with syrup on all sides. Grill 4 minutes per side (about 12 minutes total), turning until caramelized and tender. Serve hot with extra syrup for dippingpure tropical bliss!
