Hot-Brewed Iced Tea
- Heat 8 cups of water until it simmers; take off the heat and add 3 tablespoons of loose tea leaves or 6 tea bags.
- Let it steep for about 4 minutes, or until it reaches your preferred strength.
- Use a fine-mesh strainer to remove the loose tea or take out the tea bags.
- Allow to cool, then pour into a pitcher, cover, and chill in the refrigerator.
Cold-Brewed Iced Tea
- Mix 8 cups of cold water with 6 tablespoons of loose tea or 10 tea bags in a pitcher.
- Cover and place it in the fridge for 15 to 36 hours until it attains your desired flavor.
- Strain the loose tea with a fine-mesh sieve or remove the tea bags.
Sweet Teas
Combine 3/4 cup each of sugar and water in a saucepan; add 1 infuser if you like. Heat over medium until it simmers, stirring continuously until the sugar dissolves. Remove from heat and let cool. Strain the flavored syrup through a fine-mesh sieve (this yields about 1 cup).
Flavor Infusers
- Orange: 6 strips of zest
- Blackberries: 1 cup
- Cinnamon: 2 sticks
- Lavender: 3 tablespoons dried
- Vanilla: 1 split bean
- Mint: 3 sprigs
- Ginger: 1 cup thinly sliced
- Lemon: 8 strips of zest
- Nectarine: 1 cup diced
- Cucumber: 2 cups diced
