Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 medium-sized sweet onion, diced
  • 1 can whole peeled tomatoes, crushed
  • 5 cups of either vegetable or chicken broth
  • Salt and freshly cracked black pepper to taste
  • 1/2 cup loosely packed fresh basil leaves, finely cut into thin strips

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the diced onion and saut, stirring occasionally, until soft and fragrantabout 10 minutes.
  2. Stir in the crushed tomatoes and broth. Bring to a boil, then reduce to a simmer. Cook uncovered until thickened, about 20 minutes. Season with salt, pepper, and stir in the fresh basil for a burst of flavor.
  3. For safety, place the pot in the sink and use an immersion blender to puree until velvety smooth.
