Spiced Pumpkin Vodka Infusion

- 2 cups raw kabocha or sugar pumpkin, peeled and cut into 1/4-inch pieces
- 3 cups vodka
- 1 cinnamon stick
- 2 whole vanilla beans
- 3 large pieces of candied ginger, sliced lengthwise
Cooking Mode (Keep screen awake)
- Heat the oven to 350F (175C).
- Arrange the pumpkin chunks on a baking sheet lined with a silicone mat and roast until just soft, approximately 20 minutes. Remove from the oven and allow to cool.
- Pour the vodka into a large glass container or bottle. Add the roasted pumpkin, cinnamon stick, vanilla beans, and candied ginger. Allow the mixture to infuse at room temperature for one week, gently shaking the container every couple of days. After one week, strain the infused vodka through a fine mesh sieve back into the original vodka bottle using a funnel. Seal and chill until serving.
