Spicy Pimento Cheese Spread Recipe

A classic Southern appetizer served with butter crackers and pickles on the side, pimiento cheese is also delightful to have on hand as leftovers, as it livens up any sandwich. (PS: note that I spelled pimiento as is standard at FN but it does not agree with the spelling in the recipe title.)

Ingredients:

  • 10 ounces cream cheese, softened
  • 3/4 cup mayonnaise
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon celery seed
  • 1 cup pickled jalapeos, chopped
  • 6 ounces piquillo pepper, chopped (regular pimentos can be used as a substitute)
  • 5 cups shredded Cheddar cheese (about 1 1/4 pounds)
  • 1 to 2 tablespoons Sriracha sauce

Instructions:

  1. Mix the cream cheese, mayonnaise, garlic powder, onion powder, and celery seed until smooth.
  2. Fold in the chopped pickled jalapeos, chopped piquillo peppers, and shredded Cheddar cheese.
  3. Add Sriracha to taste and blend until evenly combined; add more mayonnaise or Sriracha if needed after tasting.
  4. Refrigerate before serving to allow the flavors to meld.
