- 8 ounces fresh sage pork sausage, casings discarded
- 2 sticks (16 tablespoons) unsalted butter, brought to room temperature
- 1 cup sour cream
- 2 cups self-rising flour
- 5 ounces finely shredded extra-sharp cheddar cheese
Instructions:
- Preheat the oven to 400F and line two baking sheets with parchment paper.
- Brown the sausage in a medium skillet over medium heat, breaking it into small crumbles as it cooks; transfer to a plate and cool completely.
- In a stand mixer, beat the softened butter and sour cream until smooth. Add the flour gradually, mixing after each addition until combined. Fold in the cooled sausage and shredded cheddar until evenly distributed.
- Scoop large spoonfuls of the dough onto the prepared baking sheets, spacing them apart. Bake 2025 minutes, or until the biscuit tops are lightly golden.
If you don't have self-rising flour, substitute 2 cups all-purpose flour plus 3 teaspoons baking powder and 1/4 teaspoon salt.
