Ingredients
- 3 tablespoons unsalted butter
- 1 small shallot, finely diced
- 4 cloves garlic, minced
- 1 tablespoon all-purpose flour
- Kosher salt and freshly ground black pepper
- 3 cups half-and-half cream
- 1 to 2 teaspoons smoked paprika
- 2 1/2 pounds russet potatoes, peeled and thinly sliced
- 1 cup shredded sharp white cheddar cheese
- 1/3 cup freshly grated Parmesan cheese
Instructions
- Preheat your oven to 350F. Butter a 9-by-13-inch baking dish using 1 tablespoon of the butter. In a large saucepan over medium heat, melt the remaining 2 tablespoons of butter. When it foams, add the shallot and garlic; cook, stirring occasionally, for 3 to 4 minutes until softened.
- Stir in the flour and cook, stirring frequently, until golden, about 2 minutes. Season with salt and pepper. Pour in the half-and-half, smoked paprika, and potatoes. Bring to a gentle simmer and cook for 5 minutes.
- Transfer half the potato mixture to the prepared dish, shaking gently to even it out. Sprinkle with half of both cheeses. Add the remaining potatoes, shake again, and top with the rest of the cheese.
- Cover with foil and bake for 45 minutes until bubbling. Uncover and bake 15 more minutes for a golden crust. Rest 15 minutes before serving.
