One 3 1/2- to 4-pound pork loin
1/2 teaspoon garlic powder
1/4 teaspoon ground ginger
1/8 teaspoon dried thyme
Salt and freshly ground black pepper
1 tablespoon cooking oil
2 cups chicken broth
2 tablespoons fresh lemon juice
1 tablespoon soy sauce
3 tablespoons cornstarch

- Trim any visible fat from the pork loin and cut to fit your 3 1/2- to 5-quart slow cooker. Mix garlic powder, ginger, thyme, and 1/4 teaspoon black pepper in a bowl. Rub this zesty blend all over the pork for unbeatable flavor.
- Heat oil in a skillet over medium-high. Sear pork on all sides until golden and irresistible. Drain fat, transfer to slow cooker. Whisk chicken broth, lemon juice, and soy sauce; pour over pork. Cover and cook on low 8-10 hours or high 4-5 hours until fork-tender. Rest on a platter, covered.
- For silky gravy, skim fat from juices. Measure 2 cups liquid (add water if needed). Reserve 1/2 cup; stir in cornstarch until smooth. Simmer in saucepan until thickened and bubbly, 2-3 minutes. Stir 2 more minutes; season with salt and pepper. Slice pork and drown in gravyheaven on a plate!
