Lemon Sherry Cordial

Ingredients
- 1/3 cup sugar
- Zest of 2 lemons, finely grated
- 1/2 cup lemon juice
- 1/2 cup sherry (medium to dry)

Instructions
- In a microwave-safe glass measuring cup, mix the sugar with 1/3 cup of water. Heat in the microwave until it starts to steam, about 45 seconds to one minute. Stir well to dissolve the sugar completely.
- Add the lemon zest and lemon juice to the sugar syrup. Let it cool fully before straining it through a fine mesh sieve. (This vibrant lemon syrup can be prepared ahead and refrigerated for up to one weekperfect for spontaneous gatherings!)
