Ingredients
- 2 pounds of fresh asparagus
- High-quality olive oil
- Kosher salt, plus extra to taste
- Freshly cracked black pepper
Instructions
- Heat the oven to 400F.
- Remove and discard the woody ends of the asparagus. For thick spears, peel the bottom portions. Arrange the asparagus on a baking pan, drizzle with olive oil, and gently toss to ensure each spear is coated. Arrange in a single even layer. Generously season with salt and pepper.
- Roast in the oven for about 25 minutes until the asparagus is soft but has a slight crunch.
