Ingredients

  • 2 pounds of fresh asparagus
  • High-quality olive oil
  • Kosher salt, plus extra to taste
  • Freshly cracked black pepper

Instructions

  1. Heat the oven to 400F.
  2. Remove and discard the woody ends of the asparagus. For thick spears, peel the bottom portions. Arrange the asparagus on a baking pan, drizzle with olive oil, and gently toss to ensure each spear is coated. Arrange in a single even layer. Generously season with salt and pepper.
  3. Roast in the oven for about 25 minutes until the asparagus is soft but has a slight crunch.
