Ingredients

  • 2 pounds leeks, preferably smaller, slender ones
  • 3 tablespoons vegetable oil
  • Kosher salt and freshly ground black pepper
  • 1/4 to 1/2 teaspoon crushed red pepper flakes
  • 8 ounces peeled and deveined medium shrimp (16 to 20 count), halved lengthwise
  • 4 cloves garlic, thinly sliced
  • Serving suggestion: steamed white rice

Instructions

  1. Trim root ends and dark green tops from leeks; discard. Halve lengthwise, then cut into 1-inch pieces. Soak in cold water, swish to remove grit, lift out, and drain in a colander. Rinse repeatedly until water runs clearthis yields about 6 cups. Toss to separate leaves.
  2. Heat a large skillet over high until smoking hot. Add 1 tablespoon oil, swirl to coat. Add half the leeks, a generous pinch of salt and pepper. Spread evenly; cook undisturbed until lightly charred, about 1 minute. Sprinkle a pinch of red pepper flakes; cook 1 more minute without stirring. Toss until softened, about 1 minute.
