Ingredients
- 2 pounds leeks, preferably smaller, slender ones
- 3 tablespoons vegetable oil
- Kosher salt and freshly ground black pepper
- 1/4 to 1/2 teaspoon crushed red pepper flakes
- 8 ounces peeled and deveined medium shrimp (16 to 20 count), halved lengthwise
- 4 cloves garlic, thinly sliced
- Serving suggestion: steamed white rice
Instructions
- Trim root ends and dark green tops from leeks; discard. Halve lengthwise, then cut into 1-inch pieces. Soak in cold water, swish to remove grit, lift out, and drain in a colander. Rinse repeatedly until water runs clearthis yields about 6 cups. Toss to separate leaves.
- Heat a large skillet over high until smoking hot. Add 1 tablespoon oil, swirl to coat. Add half the leeks, a generous pinch of salt and pepper. Spread evenly; cook undisturbed until lightly charred, about 1 minute. Sprinkle a pinch of red pepper flakes; cook 1 more minute without stirring. Toss until softened, about 1 minute. Transfer to a bowl. Repeat with remaining oil, leeks, salt, pepper, and flakes.
- Return skillet to high heat; add last tablespoon oil. Toss in shrimp, garlic, and red pepper flakes (to taste). Season with salt and pepper; stir until shrimp pinken in spots, under 1 minute. Add leeks back; toss until shrimp are fully cooked. Serve hot over steamed rice for a flavor explosion!
