Ingredients

  • 1 tablespoon egg white (approximately half of a large egg white)
  • 1 tablespoon mirin (sweet Japanese rice wine) or dry sherry
  • 3 tablespoons cornstarch
  • 1 pound skinless, boneless chicken breasts, cut into 1/2-inch cubes
  • 1/4 cup oyster sauce
  • 2 bunches broccolini, trimmed of tough stems and cut into pieces
  • 2 tablespoons extra-virgin olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon peeled ginger, finely chopped
  • 1 bunch scallions, thinly sliced
  • 4 to 5 baby bell peppers (any color), sliced into thin rings
  • 1 to 2 red jalapeo peppers, seeded and thinly sliced
  • 1/4 cup sliced almonds or chopped cashews, toasted

Instructions

  1. Bring a pot of water to a rolling boil. In a medium bowl, whisk together egg white, mirin, and 1 tablespoon cornstarch. Add the chicken and toss to coat evenly. In a small bowl, whisk the remaining 2 tablespoons cornstarch with oyster sauce and 3/4 cup water until smooth.
  2. Cook the broccolini in the boiling water until crisp-tender, about 1 to 2 minutes. Drain and rinse with cold water to stop cooking.
  3. Heat 1 tablespoon olive oil in a large nonstick skillet over medium heat. Add the chicken and cook while stirring until no longer pink, roughly 4 minutes. Remove the chicken to a plate. Increase heat to high, add the remaining 1 tablespoon olive oil, then add garlic and ginger, stir-frying for 30 seconds. Add scallions and peppers, cooking for another minute. Return chicken, broccolini, and nuts to the pan, stir-frying for 2 more minutes.
  4. Lower heat to medium and whisk the oyster sauce mixture again before pouring it into the skillet. Stir and cook until the sauce thickens, about 3 minutes.
