Instructions

  1. Gently use a peeler to remove the peel from the lemon and orange, being careful to take only the colored rind and avoid the white pith underneath.
  2. Combine the citrus peels and olive oil in a small saucepan. Warm over low heat for about 3 minutes until the peels soften and bubble lightly without curling. Remove from heat and allow the mixture to steep for about 3 hours as it cools completely.
  3. Strain the peels from the oil. Using a funnel, pour the fragrant infused oil into a cruet with a spout and refrigerate. Drizzle this bright, citrusy oil over salads, pasta, roasted vegetables, and grilled fish to add a fresh burst of flavor to your favorite dishes.
