Ingredients
- 2 cups bread crumbs
- 1/2 cup olive oil
- Salt and pepper
- 5 pounds baking potatoes, like russets
- 2 cups shredded mozzarella
- 1/4 cup grated Parmesan

Instructions
- Preheat oven to 350 degrees.
- In a small bowl, combine bread crumbs, olive oil, and a pinch of salt and pepper.
- Peel potatoes and slice them into quarters lengthwise. Generously coat each potato piece with the bread crumb mixture and arrange them on a thin sheet pan.
- Place the potatoes in the oven and bake for 1 hour. Once cooked, remove from the oven and sprinkle shredded mozzarella and grated Parmesan over the top. Return to the oven for 5 minutes, or until the cheese is melted and lightly golden.
