Ingredients
- 2 (1 pound each) pork tenderloins, sliced in half crosswise
- Vegetable oil
- Salt and freshly ground black pepper
- 1 1/2 cups apple cider
- 1/2 cup apple cider vinegar
- 1/4 cup maple syrup
Instructions
- Preheat your oven to 500F and position the rack in the upper third of the oven.
- Dry the pork tenderloins with paper towels, then brush them with vegetable oil. Season generously with salt and freshly cracked black pepper. Heat a large skillet over medium-high heat. Add two pieces of the pork tenderloin and sear until browned on all sides, turning occasionally, about 4 minutes. Transfer the browned pork to a baking sheet and repeat with the remaining pieces.
- Place the baking sheet in the oven and roast the pork until an instant-read thermometer inserted into the center registers between 145F and 150F, around 15 minutes. Meanwhile, return the skillet to high heat and pour in the apple cider and apple cider vinegar, stirring and scraping any browned bits from the pan. Simmer until the liquid reduces by about two-thirds, approximately 8 minutes. Lower the heat to medium, stir in the maple syrup, and remove the pan from heat until the pork finishes cooking.
- When the pork is done, transfer it to a cutting board and let it rest for about 5 minutes. Reheat the sauce over medium-high heat, add the pork along with any juices collected on the baking sheet, and spoon the sauce over the meat to coat thoroughly. Once warmed, slice the pork thinly and serve with the sauce drizzled on top.
