Orzo Pilaf with Goat Cheese

In a saucepan, saut 3 chopped shallots and 1 tablespoon chopped thyme with 1 tablespoon each butter and olive oil over medium-high heat for 4 minutes. Season with salt and pepper.
Add 1 cup orzo and toast for 2 minutes.
Pour in 1 3/4 cups water and bring to a gentle simmer. Lower the heat, cover, and cook until tender, about 12 minutes.
Stir in 1/3 cup chopped parsley, then finish by adding goat cheese on top.
