Ingredients:

  • 1 head of garlic, top sliced off
  • 2 tablespoons olive oil
  • 2 pork tenderloins (about 1 to 1 1/2 pounds each), trimmed
  • Salt and freshly ground black pepper
  • 1 tablespoon chopped fresh rosemary leaves
  • 12 fresh sage leaves
  • 1 tablespoon chopped fresh thyme leaves
  • 12 slices bacon (about 1/4-inch thick)

Instructions:

  1. Preheat oven to 300F (150C). Place garlic head in a ramekin, drizzle with 1 tablespoon olive oil, wrap in foil, and roast until soft, about 45 minutes. Cool slightly, then squeeze cloves into a bowl.
  2. On a clean surface, spread half the roasted garlic over each tenderloin. Season with salt and pepper, sprinkle with combined chopped herbs, then wrap each with 6 bacon slices, securing with kitchen twine.
  3. Increase oven to 375F (190C). Heat remaining oil in a skillet over medium-high. Sear tenderloins on all sides until golden. Transfer to a roasting pan; bake to medium doneness, 8-10 minutes.
  4. Rest on a cutting board 10 minutes. Remove twine, slice, and serve this mouthwatering masterpiece!
