Ingredients

  • 2 tablespoons olive oil
  • 3 garlic cloves, chopped
  • 1 small onion, chopped
  • 4 red bell peppers, roasted, peeled, deseeded, and chopped
  • 2 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a saut pan. Cook the garlic and onion until the onion becomes translucent, approximately 3 to 5 minutes.
  2. Add the roasted red peppers and pour in the chicken broth. Bring the mixture to a boil.
  3. Reduce heat and let it simmer for 10 to 15 minutes.
  4. Remove from heat and blend until smooth.
  5. Season with salt and pepper to taste.
