Roasted Red Pepper Sauce

Ingredients
- 2 tablespoons olive oil
- 3 garlic cloves, chopped
- 1 small onion, chopped
- 4 red bell peppers, roasted, peeled, deseeded, and chopped
- 2 cups chicken broth
- Salt and pepper to taste
Instructions
- Heat the olive oil in a saut pan. Cook the garlic and onion until the onion becomes translucent, approximately 3 to 5 minutes.
- Add the roasted red peppers and pour in the chicken broth. Bring the mixture to a boil.
- Reduce heat and let it simmer for 10 to 15 minutes.
- Remove from heat and blend until smooth.
- Season with salt and pepper to taste.
