  1. Preheat the oven to 425 degrees F. Grease six 6-ounce ramekins with butter and then coat them with cooking spray; place rounds of parchment on the bottoms. Arrange the ramekins on a baking sheet and place in the oven to warm up.
  2. Prepare the ingredients from the box for cake-like brownies, but set the eggs aside separately. Beat the egg whites to stiff peaks using a mixer in a bowl. In another bowl, combine the brownie mix with the water, oil, and egg yolks. Stir in 1/2 cup of the whipped egg whites to lighten the batter. Carefully fold in the rest of the egg whites.
  3. Move swiftly to divide the batter evenly into the warmed ramekins, filling each to about halfway (roughly 1/2 cup each). Bake until the tops firm up while the centers remain slightly soft when touched, around 14 minutes. Allow them to rest for 5 minutes.
  4. Slide an offset spatula along the edge of each cake and flip onto individual plates. Spoon Sunny's 1-2-3 Berry Sauce over the plates, add a dollop of whipped cream on each cake, and finish with a mint sprig.

Sunny's 1-2-3 Berry Sauce:

  1. In a saucepan over medium-high heat, combine the berries, sugar, and lemon juice. Stir while cooking until the berries start to soften, the sugar melts, and the mixture thickens a bit, 8 to 10 minutes. Use warm or chilled.

Transform boxed brownie mix into irresistibly light, souffl-style cakes that melt in your mouth! Fluffy egg whites create a magical texture, crowned with vibrant berry sauce and fresh whipped cream. Perfect for impressing guests with minimal effortbake up bliss in just 45 minutes!
