- Preheat the oven to 425 degrees F. Grease six 6-ounce ramekins with butter and then coat them with cooking spray; place rounds of parchment on the bottoms. Arrange the ramekins on a baking sheet and place in the oven to warm up.
- Prepare the ingredients from the box for cake-like brownies, but set the eggs aside separately. Beat the egg whites to stiff peaks using a mixer in a bowl. In another bowl, combine the brownie mix with the water, oil, and egg yolks. Stir in 1/2 cup of the whipped egg whites to lighten the batter. Carefully fold in the rest of the egg whites.
- Move swiftly to divide the batter evenly into the warmed ramekins, filling each to about halfway (roughly 1/2 cup each). Bake until the tops firm up while the centers remain slightly soft when touched, around 14 minutes. Allow them to rest for 5 minutes.
- Slide an offset spatula along the edge of each cake and flip onto individual plates. Spoon Sunny's 1-2-3 Berry Sauce over the plates, add a dollop of whipped cream on each cake, and finish with a mint sprig.
Sunny's 1-2-3 Berry Sauce:
- In a saucepan over medium-high heat, combine the berries, sugar, and lemon juice. Stir while cooking until the berries start to soften, the sugar melts, and the mixture thickens a bit, 8 to 10 minutes. Use warm or chilled.
Transform boxed brownie mix into irresistibly light, souffl-style cakes that melt in your mouth! Fluffy egg whites create a magical texture, crowned with vibrant berry sauce and fresh whipped cream. Perfect for impressing guests with minimal effortbake up bliss in just 45 minutes!
