Ingredients
- 1/4 cup sugar
- Zest of 2 limes
- 1/4 cup packed fresh mint leaves, plus additional torn leaves for garnish
- 1 1/2 cups cold coconut water
- 1 cup lime juice (approximately 8 juicy limes)
- 1/2 cup white rum
- 1/4 cup coconut rum
- Top-quality lime-flavored club soda, chilled
Directions
- In a small saucepan, combine the sugar, lime zest, and 1/4 cup water. Heat until it reaches a boil, stirring occasionally until the sugar dissolves. Let the syrup chill completely before using.
- Place the mint leaves and 1/4 cup of the chilled lime syrup into a pitcher and gently muddle with a wooden spoon to release the mint oils. Add the coconut water, lime juice, white rum, and coconut rum, then stir well. Cover and refrigerate for at least 30 minutes to let the flavors meld.
- Fill four glasses with ice and pour the rum mixture until each glass is about three-quarters full. Top with lime club soda, garnish with torn mint leaves, and serve immediately.
