About This Recipe
In our household, some "certain individuals" (names withheld) enjoy pairing almost every meal with applesauce. Whether it's pork chops, eggs, steak, or pancakes, applesauce is always on the side. Consequently, we stock numerous jars in various flavors. This recipe traces back to my grandmother Elsie, who preferred shortening instead of butterhow quaint!
Ingredients
- 1/2 cup unsalted butter, softened
- 2 cups brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking soda
- 3/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 2 cups applesauce
- 1/2 cup raisins
- 1 cup chopped walnuts
- Powdered sugar (optional, for dusting)
Instructions
- Preheat your oven to 350F (175C).
- Using a mixer fitted with a whisk, beat the butter until soft. Add the brown sugar and continue to mix. Beat in eggs one at a time along with the vanilla extract, mixing until the batter is light and fluffy.
- In a separate bowl, sift together the flour, baking soda, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the butter mixture, alternating with the applesauce. Gently fold in the raisins and chopped walnuts.
- Pour the batter into a greased and floured loaf or tube pan. Bake until the cake feels firm when pressed, about 40 to 45 minutes.
- Allow the cake to cool while still in the pan, then invert onto a plate and sprinkle with powdered sugar if desired.
