This sandwich resembles a traditional Reuben you'd enjoy at a restaurant with its own twist. It includes a custom Thousand Islandstyle dressing, rye bread, Swiss cheese, and sauerkraut. What sets it apart is the addition of sauted onions mixed with the sauerkraut, which add sweetness and a crisp texture you'll appreciate.
Sea Island Dressing:
- 1 cup mayonnaise
- 1/3 cup ketchup
- 3 tablespoons dill pickle relish
- 2 tablespoons sriracha
- 1 tablespoon Miss Brown's House Seasoning (recipe below)
- 2 teaspoons Worcestershire sauce
Reuben Sandwich:
- 7 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 large onion, sliced (about 2 cups)
- Kosher salt to taste
- 2 1/4 cups drained sauerkraut
- 12 slices rye sandwich bread
- 12 slices Swiss cheese
- 2 1/4 pounds thinly sliced corned beef
Miss Brown's House Seasoning:
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon sweet paprika
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
Instructions:
- Prepare the Sea Island dressing by mixing mayonnaise, ketchup, relish, sriracha, House Seasoning, and Worcestershire sauce in a small bowl. Set aside.
- For the sandwiches, heat 1 tablespoon of butter with the olive oil in a large skillet over medium-high heat. Add the sliced onion and a pinch of salt and cook until softened, about 5 minutes. Stir in the sauerkraut and continue cooking until the mixture begins to brown, about 5 more minutes. Transfer the sauted sauerkraut and onions to a bowl and set aside. Clean the skillet if needed before grilling the sandwiches.
- Spread the Sea Island dressing on six slices of rye bread. On each dressed slice, layer one slice of Swiss cheese, a portion of corned beef, the sauted sauerkraut and onions, then another slice of Swiss. Top with the remaining bread slices.
- Melt 3 tablespoons of butter in the skillet. Grill three sandwiches at a time, cooking each side until golden brown and crispy, about 3 to 4 minutes per side. Repeat with the remaining butter and sandwiches.

Mix garlic powder, onion powder, paprika, salt, and black pepper in a small bowl. Store in an airtight container for future use.
