  • Vegetable cooking spray
  • 2 large russet potatoes, roughly peeled and thinly sliced
  • 1/2 cup Swiss cheese, grated
  • 2 green onions, finely chopped
  • Salt and freshly ground black pepper, to taste
  • 3/4 cup heavy cream

Instructions

  1. Preheat your oven to 375F (190C) for perfectly baked gratins.
  2. Lightly coat 8 muffin cups with vegetable spray. Layer thin potato slices with Swiss cheese and fresh green onions in each cup, creating beautiful alternating layers that will turn golden and crispy.
  3. Season generously with salt and pepper, then crown each gratin with 1 to 2 tablespoons of heavy cream for a luxurious, creamy texture.
  4. Cover the muffin tin snugly with foil and bake for 30 to 40 minutes. Halfway through cooking, remove the foil to allow the tops to develop a delicate crust.
  5. Once the potatoes are tender and the cream has reduced to a silky sauce, carefully invert each gratin onto your serving plate. The golden, caramelized edges make an elegant presentation.
