- 1 box your preferred cornbread mix
- 1 green chile, roasted, peeled, seeded and chopped
- 1 cup shredded Cheddar cheese

- Prepare the cornbread batter as directed on the box. Fold in the roasted green chiles and half of the Cheddar cheese. Transfer the mixture into a greased baking dish or Dutch oven. Bake following the package instructions until the top is golden brown. Once out of the oven, sprinkle the remaining Cheddar cheese over the top. Allow to sit for 5 minutes before cutting and serving.
