Greek Yogurt Herb Dressing

This light and zesty salad dressing is low in calories (only 60 per serving) and low in fat (5 grams per serving). It's also versatileperfect as a dip for fresh vegetable sticks.

Ingredients
- 3/4 cup 2-percent Greek yogurt
- 2 tablespoons rice vinegar
- 2 tablespoons olive oil
- 1/2 cup chopped fresh chives (from a small bunch)
- 1/2 cup chopped fresh parsley
- 1 small garlic clove
- Kosher salt and freshly ground black pepper
Instructions
- Place the yogurt, 2 tablespoons water, rice vinegar, olive oil, chives, parsley, garlic, and 1/2 teaspoon each salt and pepper into a blender or food processor. Blend until smooth.
- Cover and refrigerate for 30 minutes before serving. The dressing can be stored in the refrigerator for up to 3 days.
