Directions
- Peel, deseed, and dice 2 seedless cucumbers; freeze for 2 hours. Chill 4 tall glasses in the fridge meanwhile.
- Blend the frozen cucumbers with 3 ounces gin, 2 ounces elderflower liqueur, 1/2 cup fresh mint leaves, and 1/4 cup frozen lemonade concentrate until slushy and irresistible.
- Pour into chilled glasses, top with seltzer water, and stir gently for fizzy perfection.
- Garnish with a crisp cucumber slice and serve this cool, minty delight!
