Ingredients
- 1 large cucumber, peeled and diced
- 1 bunch watercress, ends trimmed
- 1/2 cup parsley, chopped
- 2 tablespoons honey
- 2 tablespoons white wine vinegar
- A splash of water
- Salt and freshly cracked black pepper
- 1/4 cup extra-virgin olive oil
Directions
- Add the diced cucumber, prepared watercress, and chopped parsley to a bowl.
- In a small bowl, whisk together the honey, white wine vinegar, and a splash of water. Season with salt and pepper, then gradually whisk in the olive oil until emulsified.
