Chicken Stew Ingredients

  • Two whole chickens (each about 3 pounds), each split into 6 pieces, reserving backbones
  • 1/2 cup (1 stick) unsalted butter
  • 6 medium carrots, cut into 1-inch rounds
  • 6 cloves garlic, sliced thinly
  • 4 celery stalks, cut into 1-inch chunks
  • 2 large leeks (white part only), sliced into 1/2-inch pieces, soaked in cold water to remove sand
  • 2 medium yellow onions, diced into 1/2-inch pieces
  • 1 tablespoon poultry seasoning
  • 1/2 cup all-purpose flour

Dumpling Ingredients

  • 2 1/2 cups all-purpose flour
  • 3/4 cup milk, plus more if needed
  • 2 tablespoons unsalted butter
  • 1 tablespoon baking powder
  • 2 teaspoons salt
  • 2 large eggs
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Prepare the Broth and Chicken: Place chicken portions and reserved backbones in a large stockpot. Add 16 cups water to cover. Bring to a boil, then reduce heat and simmer gently until chicken is fully cooked, about 25 to 30 minutes.
  2. Remove chicken with tongs and let cool; discard backbones. Once cool, shred or chop meat and set aside. Strain stock and keep warm.
  3. Saut the Vegetables: In a medium saucepan, melt butter over medium heat. Add carrots, garlic, celery, leeks, onions, and poultry seasoning. Saut until vegetables soften, about 8 to 10 minutes. Stir in flour to coat.
  4. Add reserved stock, bring to a boil, then simmer until thickened and vegetables are tender, about 25 minutes. Stir in shredded chicken and return to a gentle simmer.
  5. Make the Dumplings: In a bowl, combine flour, milk, butter, baking powder, salt, and eggs. Use two knives to cut in ingredients. If dough is dry, add milk 1 tablespoon at a time until moist but not sticky.
  6. Drop dough into 1/4-cup portions into simmering soup. Cover and cook until dumplings are done, 10 to 12 minutes. Sprinkle with chopped parsley and serve steaming hot for ultimate comfort.
