Scallion-Pimento Cheese:

- Preheat the oven to 450 degrees. Place a 10-inch cast-iron skillet in the oven to heat.
- For the scallion-pimento cheese: Combine the cheese, pimentos, mayonnaise, and scallions in a large bowl by stirring. Set aside, or if preparing in advance, store in the refrigerator until needed.
- For the country ham biscuits: In a bowl, combine the flour, baking powder, and salt. Use a pastry blender or two table knives to cut the chilled butter cubes into the flour mixture until it looks like coarse crumbs. Stir in the buttermilk with a fork to form a soft dough that pulls away from the bowl sides (ensure all flour is incorporated). Add the diced ham and mix.
