  1. Preheat the oven to 450 degrees. Place a 10-inch cast-iron skillet in the oven to heat.
  2. For the scallion-pimento cheese: Combine the cheese, pimentos, mayonnaise, and scallions in a large bowl by stirring. Set aside, or if preparing in advance, store in the refrigerator until needed.
  3. For the country ham biscuits: In a bowl, combine the flour, baking powder, and salt. Use a pastry blender or two table knives to cut the chilled butter cubes into the flour mixture until it looks like coarse crumbs. Stir in the buttermilk with a fork to form a soft dough that pulls away from the bowl sides (ensure all flour is incorporated). Add the diced ham and mix. Transfer the dough to a lightly floured surface and gently knead 3 or 4 times until smooth and easy to handle.
  4. Using your hands or a floured rolling pin, roll out the dough to about 1/2-inch thick. Use a floured 2-inch biscuit cutter to cut out the biscuits.
  5. Take the skillet out of the oven and melt the remaining 1 tablespoon of butter inside it. Arrange the biscuits in the skillet. Bake for 10 to 12 minutes until they are lightly golden brown.
  6. To serve: Split the warm biscuits open and top each with a hearty dollop of the pimento cheese spread. Enjoy these flaky, Southern-inspired delightsperfect for brunch or any gathering!

Grilled Jalapeño-Chive Corn Sticks Recipe

Corn sticks are a Southern specialty and the inspiration for this version that’s “baked” on the grill. Also known as cornbread sticks, corn sticks are crispy on the outside, buttery and soft on the inside and always served with a big pat of butter. A special cast-iron pan features indentations shaped like small ears of corn and are part of their appeal. The batter sizzles when it hits the preheated pan and immediately begins to form a delicious crust. For this recipe, we grilled corn on the cob and then puréed some to moisten the batter and folded in the rest for texture. Jalapeños and chives boost the flavor, and a jalapeño-honey butter is a flavorful finish for the sticks.
