Ingredients

  • 1 pound O-shaped pasta
  • 3 tablespoons salted butter
  • 2 tablespoons olive oil
  • 1/2 yellow onion, diced
  • 3 cloves garlic, minced
  • Kosher salt and freshly ground black pepper
  • 3 tablespoons all-purpose flour
  • 2 1/2 cups milk
  • 1/2 cup heavy cream
  • 4 ounces white processed cheese
  • 1 cup shredded Havarti cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 cups prepared fried onions
  • 2 green onions, sliced (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit for that perfect golden bake.
  2. Cook the pasta per package instructions, drain thoroughly, and set asideready for its cheesy embrace.
  3. In a large skillet over medium heat, melt the butter with olive oil. Toss in diced onion and minced garlic, season with salt and pepper, and saut until soft and fragrant, about 4 to 5 minutes.
  4. Sprinkle in the flour, whisking nonstop for 1 minute to create a smooth roux. Slowly pour in milk and heavy cream, whisking until the sauce thickens and bubbles, 2 to 3 minutes. Melt in the cheeses gradually until velvety smooth, then taste and tweak seasonings.
