Chocolate-Orange Brown Butter Popcorn

Ingredients
- 3 cups popped popcorn (see recipe below)
- 2 tablespoons unsalted butter
- 2 tablespoons grey salt
- 1 orange
- 1 ounce bittersweet chocolate
For the Popcorn
- 1/4 cup olive oil
- 1 1/2 cups popcorn kernels
Instructions
- Set a 10-inch saut pan over medium-high heat. Tilt the pan so the butter pools at one side, then add the unsalted butter and brown it, tipping the pan as needed for even browning. Sprinkle the salt into the browned butter and immediately pour the mixture over the popcorn in a large mixing bowl; toss thoroughly to coat.
- Using a microplane or fine grater, zest the orange (about 2 tablespoons) and grate the bittersweet chocolate over the dressed popcorn. Toss again so the zest and chocolate are evenly distributed.
How to Make Popcorn
Yields: Around 6 cups of popcorn
- Preheat a large Dutch oven or heavy-bottomed pot over high heat. Pour in the olive oil and add the popcorn kernels. When kernels start popping, cover the pot and lower heat to medium. Continue until popping slows and most kernels have popped (watch closely to avoid burning), then remove from heat and pour popcorn into a bowl.
