- 1/4 cup shallot, chopped finely
- 1 tsp garlic, minced
- 2 tbsp fresh lemon juice
- 7 oz Greek-style yogurt (like Fage Total)
- 1/2 cup quality mayonnaise (such as Hellmann's)
- 4 oz strong Gorgonzola cheese, crumbled
- 5 shakes Tabasco sauce (add to taste)
- 1 tsp kosher salt
- 1/2 tsp black pepper, freshly cracked
- 3 tbsp fresh chives, minced

Instructions:
- In a food processor equipped with the steel blade, place the shallot, garlic, lemon juice, Greek yogurt, mayonnaise, crumbled Gorgonzola, Tabasco sauce, salt, and pepper.
- Pulse approximately 12 times until the dip is mostly smooth, but plenty of texture remains.
- Add the minced chives. Pulse an additional 2-3 times to mix the chives through the dip.
- Move the finished dip to a bowl, cover with plastic wrap, and refrigerate for a minimum of 2 hours. This step ensures the flavors fully meld into tangy perfection.
