Ingredients
- 6 ounces semisweet chocolate chips
- 3 tablespoons salted butter, at room temperature
- 1 tablespoon dark rum
- 1 teaspoon unsweetened cocoa powder
- 1/2 teaspoon orange zest
- 1/2 cup crushed biscotti
- 2 tablespoons dried cherries
- 2 tablespoons chopped dried apricots
- 2 tablespoons chopped pistachios
- 2 tablespoons chopped almonds
- 1/4 cup confectioners' sugar, for dusting
Instructions
- Place the chocolate chips and butter into a medium-sized heatproof bowl. Set the bowl over a pan of gently simmering water, making sure the bottom of the bowl does not touch the water. Stir occasionally until the chocolate and butter are fully melted and smooth. Remove from heat and stir in the rum, cocoa powder, and orange zest. Using a rubber spatula, gently fold in the crushed biscotti, dried cherries, chopped apricots, pistachios, and almonds until everything is evenly mixed.
- Transfer the mixture onto a sheet of parchment paper. Shape it into a log about 7 inches long and 2 inches wide, making sure to roll it tightly by twisting the ends of the parchment. Place the log in the refrigerator and chill for at least 2 hours, or until firm.
- Sprinkle a plate with confectioners' sugar. Take the chilled log out of the parchment and roll it in the sugar, shaking off any extra. Let it sit at room temperature for around 15 minutes to soften slightly. Using a serrated knife, slice the log into 1/2-inch thick pieces.
- If you're not serving it right away, keep the log refrigerated. For gifting, wrap it in parchment paper.
