Butter Toffee Cookies

Ingredients:
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 cup salted butter
- 1 1/2 cups granulated sugar
- 1 tablespoon vanilla extract
- 2 eggs
- 2 cups toffee pieces (either homemade butter toffee or store-bought bits)
Instructions:
- Preheat the oven to 350F.
- Sift together the flour and baking soda in a medium bowl. In a separate large bowl, cream the butter, sugar, and vanilla extract until light and fluffy. Add eggs one at a time, blending thoroughly after each addition. Gently fold in the toffee pieces.
- Gradually combine the creamed mixture with the dry ingredients until evenly mixed. Using a rounded tablespoon, scoop the dough and place portions at least 2 inches apart on a parchment-lined baking sheet.
- Bake for 10 to 12 minutes until the edges are lightly golden brown. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
