Turkey or Chicken, Summer Squash, and Tomato Stir-Fry

Ingredients
- 4 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh thyme
- Kosher salt and freshly ground black pepper
- Pinch of red pepper flakes
- 1 pound chicken or turkey breast, cut into 1-inch pieces
- 1 small onion, cut into 3/4-inch dice (about 1 cup)
- 1 red bell pepper, seeded and cut into 3/4-inch dice (about 1 cup)
- 2 cloves garlic, minced
- 2 small summer squash, seeds removed and cut into a 3/4-inch dice (about 1 1/2 cups)
- 8 to 10 small cherry tomatoes, mixed colors
- 1/3 cup loosely packed fresh basil leaves
- Rice, for serving
Instructions
- Mix 2 tablespoons of olive oil with the lemon juice, thyme, 1/4 teaspoon salt, some pepper, and a pinch of red pepper flakes in a big bowl. Toss in the chicken or turkey pieces to coat them evenly. Let it marinate for 15 minutes.
- Remove the meat from the marinade and pat it thoroughly dry. Get a wok or large skillet very hot over high heat. Pour in the remaining 2 tablespoons of oil. Add the meat and stir-fry it until it turns opaque and firm, which takes around 4 minutes. Scoop it out with a slotted spoon into a large bowl.
- Toss in the onion and bell pepper to the hot pan, stir-frying until they soften up, about 1 to 2 minutes, then add them to the meat. Next, add the summer squash and stir-fry until it's tender but still crisp, roughly 2 minutes, then combine with the other ingredients.
- Put the tomatoes and garlic into the pan and cook, stirring, until the tomatoes get glossy and a bit charred, about 2 more minutes. Bring back the meat and veggies to the pan. Adjust seasoning with salt and pepper. Warm everything through for about 2 minutes. Stir in the fresh basil leaves at the end.
