Ingredients
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1/2 cup finely chopped whole scallions
- 2 cups cooked leftover egg noodles
- Salt and freshly ground black pepper, to taste
- Chopped fresh parsley for garnish
Directions
Place an 8-inch skillet over medium heat and warm the butter and olive oil until hot.
Add the scallions and stir-cook for about 2 minutes.
Incorporate the noodles, season with salt and pepper, then press them down evenly in the pan.
Let cook on medium heat for several minutes until the bottom turns lightly golden, then flip and cook until the other side develops a golden crust.
Transfer to a serving plate and top with chopped parsley.
