- 6 ounces andouille sausage, diced
- 2 bunches scallions, thinly sliced

- 1 bell pepper (red or green), chopped
- 1 tablespoon Cajun spice blend
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- 8 ounces sharp cheddar cheese, cut into small cubes
Step 1: Get ready to whip up this irresistible Cajun pasta! Bring a large pot of salted water to a boil. Add the wagon-wheel pasta and cook until just shy of al denteabout one minute less than package directions. Reserve 1 cup pasta water, then drain. Meanwhile, heat olive oil in a large skillet over high heat. Add diced andouille sausage and cook, stirring, until it starts to brown and sizzle, about 2 minutes. The spicy aroma will have you hungry already!
Step 2: Toss in thinly sliced scallions and chopped bell pepper. Saut until the veggies soften and brighten, about 3 minutes. Stir in Cajun spice blend and flour, cooking for 2 more minutes to build that bold, flavorful base.
Step 3: Slowly whisk in whole milk, stirring until the sauce thickens to creamy perfection, about 5 minutes. Add the cooked pasta, cheese cubes, and reserved pasta water.
