- 1 pint strawberries, sliced
- 4 cups baby arugula
- 1/2 cup raisins
- 1/4 cup pine nuts
- 2 tablespoons kalamata olives, halved
- 1 red onion, diced
- Fresh mint leaves, torn
- Raspberry Vinaigrette Dressing (recipe below)
- Feta cheese, crumbled
Raspberry Vinaigrette Dressing
- 1/2 cup raspberries
- 1/4 cup olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon sugar, optional
1. In a large bowl, combine the sliced strawberries, baby arugula, raisins, pine nuts, halved kalamata olives, diced red onion, and torn mint leaves. Drizzle with the Raspberry Vinaigrette and finish with crumbled feta cheese.
Raspberry Vinaigrette Dressing Preparation
1. Place raspberries, olive oil, red wine vinegar, and sugar (if using) into a blender and blend until completely smooth.
