- 5 bags English Breakfast or Earl Grey tea
- 2 cups watermelon cut into 1/2-inch cubes, plus additional for garnish
- 16 strawberries, hulled and halved, plus extra for garnish
- 1 teaspoon freshly squeezed lemon juice
- 1/4 teaspoon pure peppermint extract
- Pinch of kosher salt
- 1 bottle chilled prosecco (optional)

- One 1/2-pint container blackberries

Instructions:
- Imagine the aroma of fresh mint infusing your kitchen! In a large heavy saucepan, combine 5 cups of water and the sugar. Bring to a boil, stirring until the sugar dissolves. Add the mint leaves, then remove from heat. Add the tea bags and steep for 10 minutes. Let cool to room temperature before straining into a large pitcher or bowl.
- Blend up summer's bestpuree the watermelon and strawberries until smooth. Stir this vibrant fruit puree into the strained tea. Add lemon juice, peppermint extract, and a pinch of salt. Chill thoroughly in the fridge for at least 2 hours (up to 24). Top with chilled prosecco just before serving for a fizzy twist!
