I love a recipe with a little twist the secret here is a touch of sugar. Adding a small amount of sweetness brightens the savory flavors and makes this turkey salad irresistible. Use leftover turkey and serve it on fresh bread, crisp lettuce, or alongside sliced tomatoes for a quick, satisfying meal.
- 4 cups leftover turkey, diced
- 1/2 cup mayonnaise (see Cook's Note)
- 2 teaspoons Dijon mustard
- 1 tablespoon freshly squeezed lemon juice
- 2 teaspoons sugar
- 1/2 cup finely chopped celery
- 1/4 cup thinly sliced scallions
- 2 teaspoons chopped fresh dill
- Kosher salt and freshly ground pepper, to taste
- Bread or rolls, lettuce leaves, and sliced tomatoes for serving (optional)

- In a large bowl, combine the turkey, mayonnaise, Dijon mustard, lemon juice, sugar, celery, scallions, and dill; mix until thoroughly combined.
- Taste and season with kosher salt and freshly ground black pepper as desired. Serve immediately stuffed into sandwiches with lettuce and tomato or spooned onto lettuce leaves, or cover and refrigerate to serve later.
I often use a little less mayo for a lighter texture, but you can increase it up to 2/3 cup for an ultra-creamy salad. This turkey salad develops more flavor after resting in the fridge, so it's great fresh or the next day.
