Ingredients

  • 1 1/4 cups all-purpose flour
  • 3/4 cup sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3/4 cup sparkling water
  • 1/2 cup buttermilk
  • 1 teaspoon pure vanilla extract
  • Zest of 1 large lemon
  • 2 cups olive oil
  • 2 cups vegetable oil
  • 3 firm apples, such as Granny Smith

Instructions

  1. Combine the flour, 1/4 cup sugar, cinnamon, salt, baking powder, and baking soda in a medium bowl. Pour in the sparkling water, buttermilk, and vanilla extract, and mix until the batter comes together. Allow it to rest for 15 minutes.
  2. In a small bowl, blend the remaining 1/2 cup sugar with the lemon zest.
  3. Heat the olive oil and vegetable oil in a heavy 4 to 5-quart saucepan over medium heat until the oil reaches 375F on a deep-fry thermometer. (If you don't have a thermometer, test by frying a bread cube; it should brown in about 3 minutes.)
  4. Meanwhile, peel and core the apples, slicing them into 1/2-inch-thick pieces. Pat the apple slices dry with paper towels.
  5. Toss the apple slices into the batter until fully coated. Fry the apples in batches, turning occasionally, until they are golden brown, about 2 to 3 minutes per batch. Drain the fritters on paper towels and sprinkle with the lemon sugar while still warm. Serve immediately.
