Ingredients
- 1 1/4 cups all-purpose flour
- 3/4 cup sugar
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 3/4 cup sparkling water
- 1/2 cup buttermilk
- 1 teaspoon pure vanilla extract
- Zest of 1 large lemon
- 2 cups olive oil
- 2 cups vegetable oil
- 3 firm apples, such as Granny Smith
Instructions
- Combine the flour, 1/4 cup sugar, cinnamon, salt, baking powder, and baking soda in a medium bowl. Pour in the sparkling water, buttermilk, and vanilla extract, and mix until the batter comes together. Allow it to rest for 15 minutes.
- In a small bowl, blend the remaining 1/2 cup sugar with the lemon zest.
- Heat the olive oil and vegetable oil in a heavy 4 to 5-quart saucepan over medium heat until the oil reaches 375F on a deep-fry thermometer. (If you don't have a thermometer, test by frying a bread cube; it should brown in about 3 minutes.)
- Meanwhile, peel and core the apples, slicing them into 1/2-inch-thick pieces. Pat the apple slices dry with paper towels.
- Toss the apple slices into the batter until fully coated. Fry the apples in batches, turning occasionally, until they are golden brown, about 2 to 3 minutes per batch. Drain the fritters on paper towels and sprinkle with the lemon sugar while still warm. Serve immediately.
