Meat Filling
- 5 tablespoons canola oil
- 1/2 yellow onion, finely chopped
- 2 tablespoons sofrito
- 1 pound ground beef sirloin
- 6 tablespoons tomato sauce
- 1 tablespoon adobo seasoning
- 1/2 tablespoon salt
- 68 green olives, chopped
Fritter Dough
- 1 1/2 pounds taro root
- 3 green bananas
- 2 tablespoons annatto (achiote) oil, plus extra for brushing
- 1 1/4 tablespoons adobo seasoning
- 3/4 tablespoon salt
- Canola oil, for deep-frying
- Hot sauce (optional)

Directions
- Make the beef filling: Heat canola oil in a skillet over medium heat. Add onion and sofrito and saut about 1 minute, then add ground beef, tomato sauce, adobo, salt, and olives. Cook, breaking up the meat, until browned, about 6 minutes. Remove from heat and let cool.
- Prepare the fritter dough: Peel and slice the taro and bananas. Grate both on the fine side of a box grater (or use a food processor). In a bowl, mix the grated taro and banana with annatto oil, adobo, and salt. Refrigerate at least 1 hour to firm the dough for easier handling (optional).
- Shape the fritters: Lay a piece of wax paper on your workspace and brush its center with a little annatto oil. Place about 1/4 cup of dough in the center and flatten thinly. Add roughly 3 tablespoons of beef filling in the middle. Fold the paper to form a tube, enclosing the filling. Seal the dough at both ends and along the seam, using extra dough as needed to prevent leaks.
- Fry: Heat several inches of canola oil in a Dutch oven or heavy pot to 350F (175C). Gently lower the shaped fritters into the hot oil and fry 56 minutes, turning as needed, until cooked through and nicely browned. Transfer to a plate lined with paper towels to drain.
- Serve: Serve hot, with hot sauce if desired.
