Ingredients

  • 1 (20-ounce) can crushed pineapple with juice, drained
  • 4 cups sugar
  • 1 orange, zest and juice
  • 1 lemon, zest and juice
  • 2 jalapeno peppers, seeded and finely chopped

Instructions

  1. In a medium saucepan, combine the crushed pineapple, sugar, orange zest and juice, lemon zest and juice, and chopped jalapenos, stirring until well blended.
  2. Bring the mixture to a vigorous boil over high heat, stirring frequently. Reduce heat to medium and simmer for 15 minutes, stirring often to prevent burning.
  3. Remove from heat and allow to cool slightly before serving.
  4. Store in the refrigerator for up to one month or freeze for up to six months.
