Ingredients
- 1 pound veal scaloppini (approximately 12 slices)
- Salt and freshly ground black pepper
- Around 2 1/2 tablespoons butter
- About 2 tablespoons olive oil
- 12 ounces cremini mushrooms, sliced
- 2 large shallots, finely diced
- 3/4 cup dry white wine
- 1 cup beef stock
- 1/4 teaspoon saffron threads
- 3/4 cup heavy cream
- 1/2 cup frozen peas, thawed
- 1 lemon, cut into wedges

Instructions
- Season and sear the veal: Season the veal with salt and pepper. Heat 1/2 tablespoon butter and 2 teaspoons oil in a heavy large skillet over high heat. Working in batches if needed, add the veal and saut until just cooked and golden, about 45 to 60 seconds on each side. Move the veal to a serving dish and cover loosely with foil to keep warm. Repeat with remaining veal, adding more butter and oil as necessary.
- Make the saffron cream sauce: In the same pan, melt 1 tablespoon butter and 1 tablespoon oil over high heat. Add the mushrooms and shallots. Season with salt and pepper, then saut until the mushrooms turn golden brown, about 8 minutes. Pour in the wine, broth, and saffron, and simmer until the liquid is reduced by half, roughly 5 minutes. Stir in the cream and bring to a boil until the sauce thickens slightly, stirring frequently, about 4 minutes. Add the peas and let the sauce simmer again. Adjust the seasoning with salt and pepper as preferred.
- Serve: Spoon the sauce over the veal and serve alongside lemon wedges.
