Ingredients
- 2 cups milk
- 2 large eggs
- 4 tablespoons unsalted butter, melted and cooled, plus additional for brushing
- 1/2 teaspoon pure vanilla extract
- 1 1/4 cups all-purpose flour
- 3 tablespoons sugar
- 1/4 teaspoon salt
- Butter and maple syrup or jam, for serving

Directions
- In a large bowl, whisk together the milk, eggs, melted butter, and vanilla extract until fully combined. Gradually add the flour, sugar, and salt, whisking until the batter is entirely smooth with no lumps remaining.
- Warm a medium-sized nonstick skillet over medium heat and lightly brush with melted butter. Pour in 1/4 cup of the batter, tilting and swirling the pan to spread the batter into a thin layer covering the bottom. Cook until the edges are slightly browned and the top is set, about 1 1/2 minutes. Using a rubber spatula, carefully flip the pancake and cook for an additional 15 seconds until the other side is lightly browned. Transfer to a plate and repeat with the rest of the batter (no need to brush the pan with more butter). Fold the pancakes into quarters and serve with butter and maple syrup or your favorite jam.
