Ingredients

  • 30 ounces frozen shredded hash brown potatoes
  • 1 1/2 pounds 80/20 ground beef
  • Two 10-ounce cans diced tomatoes and green chiles, such as Rotel
  • Two 1-ounce packages taco seasoning
  • 4 scallions, thinly sliced, white and green parts separated
  • 8 ounces processed cheese, such as Velveeta, cut into small cubes
  • 8 ounces shredded Cheddar (about 2 cups)
  • Sour cream, guacamole, pickled jalapeos and fresh cilantro leaves, for serving

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Spread the hash browns evenly in a 9-by-13-inch baking dish. Break off chunks of ground beef and distribute over the potatoes. Layer on the diced tomatoes and green chiles, taco seasoning, and scallion whites. Sprinkle the processed cheese cubes across the top. Bake until the beef is fully cooked, around 45 minutes.
  3. Take out of the oven and mix thoroughly to blend everything. Cover with the Cheddar cheese and return to the oven until the cheese melts and bubbles in spots, about 15 minutes more.
  4. Allow to rest for 10 minutes, then finish with scallion greens, sour cream, guacamole, pickled jalapeos, and cilantro leaves.
