Ingredients
- 6 cups seedless watermelon pieces
- 1/4 cup simple syrup
- 2 limes, cut into pieces
- 1 1/2 cups fresh blueberries
- 1/2 cup lightly packed fresh mint leaves, plus extra sprigs for garnish
- 1 cup plata (silver) tequila
- Crushed ice
Instructions
- Process the watermelon chunks in a food processor until perfectly smooth. Strain the resulting juice into a bowl by pressing on the pulp, then discard the leftover solids.
- In a pitcher, combine simple syrup, lime chunks, blueberries, and mint leaves. Lightly muddle until the berries begin to release their juices. Pour in the tequila and watermelon juice, stirring well to blend all ingredients. Chill the mixture for at least one hour until cold.
- When ready to serve, pour over crushed ice and garnish with fresh mint sprigs.
Simple Syrup Preparation
Place 1/2 cup water in a small saucepan and bring it to a boil over high heat. Whisk in 1/2 cup sugar and cook until fully dissolved. Remove from heat and allow the syrup to cool completely before using.
