Instructions
- Put the potatoes in a large, deep skillet, cover with water, and bring to a boil. Add a pinch of kosher salt and simmer until tender, about 12 minutes.
- Warm the olive oil and 2 tablespoons of the butter in a large heavy skillet over medium-high heat. Season the steak medallions on all sides with the steak seasoning. Once the oil is hot and the butter has melted, add the steak and cook for 2 to 3 minutes per side for medium rare. Transfer to a plate, cover with foil, and let rest.
- Without cleaning the skillet, add the garlic, thyme, oregano, and onions. Lower the heat to medium and cook, scraping the pan to lift any flavorful bits from the bottom, until the onions begin to turn golden, about 6 to 8 minutes. Pour in the white wine and let it reduce for 1 minute. Stir in the remaining 4 tablespoons butter and let it melt.
- Drain the potatoes and transfer them to a serving platter. Use the bottom of a glass to gently press and slightly crush the potatoes, then sprinkle with a little kosher salt. Spoon the onion mixture over the potatoes. Arrange the steak medallions on top and garnish with chopped parsley and flaky sea salt. Serve with horseradish cream if preferred.
